  • Crab Ball:
  • 2 pints strawberries, washed and hulled
  • 1 cup, half and half
  • 1 cup sour cream
  • 1/3 cup sugar
  • 2 tbsp lemon juice
  • Crab meat
  • Mascarpone cheese



Step 1

• In a blender puree the strawberries
• Pour into a large bowl and add half and half, sour cream, sugar and lemon juice
• Stir until well combined
• Chill
• Combine the crab meat and mascarpone cheese, salt and pepper to taste.
• Ball an place in middle of soup

Garnish with mint leaves and olive oil drizzle
