Ingredients
- VINAIGRETTE
- 1 tbsp lavender infused honey
- 3 tbsp balsamic vinegar
- 1/4 tsp pepper
- 1/4 tsp salt
- 1/2 cup olive oil
- LAVENDER INFUSED HONEY
- 1 cup honey
- 1 tbsp dried lavender blossoms or 2 tbsp fresh lavender
- SALAD
- 4 oz assorted salad greens
- 4 fresh figs
- 4 oz chèvre
- 2 sprigs fresh mint

Step 1
LAVENDER INFUSED HONEY
Heat honey in a small pot over low heat until it turns to liquid. Add lavender and continue to heat gently for 10 minutes. Remove from heat and allow to infuse for a few hours. Reheat honey to a liquid and strain out flower blossoms.
To make the vinaigrette, prepare the honey well in advance and allow to cool. Combine all of the ingredients, except the oil, in a bowl and whisk. Slowly drizzle in the oil as you whisk.
To serve, divide the greens among 2-3 serving plates. Slice figs into 6 sections, arrange them among the greens and crumble chèvre over top. Drizzle vinaigrette over each salad and garnish with chopped mint leaves and pepper.
