Ingredients
- 2 tablespoons EVOO
- Juice and zest of one lime
- 1 tsp. garlic, minced
- Generous pinch of hot pepper flakes
- salt and freshly ground black pepper
- 8 jumbo shrimp, tails on and deveined
- 4 thin slices prosciutto
Preparation
Step 1
* Combine the marinade ingredients and add the shrimp and toss to coat. Set aside to marinate at room temperature for about 20 minutes.
* Remove the shrimp from the marinade and wrap each shrimp with a half-slice of prosciutto and thread onto a skewer if desired.
* Heat a grill or grill pan or stainless-steel pan to medium.
* Grill the shrimp until firm and opaque, about 3 minutes per side, until shrimp are opaque and prosciutto is crispy. Serve with extra lime or lemon, if desired or a dipping sauce of choice.
