Spanish Rice with Sausage

Ingredients

  • 1 pound bulk pork sausage
  • 1 medium onion, chopped
  • 1 cup chopped celery
  • 1 can (28 ounces) diced tomatoes, undrained
  • 2-1/2 cups water
  • 1-1/4 cups uncooked long grain rice
  • 1/2 cup chili sauce or salsa
  • 1-1/2 cups (6 ounces) shredded sharp cheddar cheese

Preparation

Step 1

In a skillet, cook sausage, onion and celery over medium heat until meat is no longer pink and vegetables are tender; drain. Add tomatoes, water rice and chili sauce. Cover and cook over low heat for 30 minutes or until rice is tender. Remove from the heat. Sprinkle with cheese; cover and let stand for 5 minutes or until cheese is melted. Yield: 4 servings.

This rice is very good!! I made this tonight & everyone raved at how good it was. It is very easy to make to. I used the tomatoes with the basil, oregano and garlic. It added a great touch to the recipe. I used salsa since I didn't have the chilli sauce and it was very good. This is a keeper & will be in our menu plan for sure! Thanks for the wonderful recipe.

This was great I only had italin spiced sausage so I used that and it was wonderful. Nice and spicy yum!!

This was delicious. My picky eaters liked it. I didn't have quite enough salsa so I used what I had and added 1 tsp. of taco seasoning. I also used a whole package of yellow rice with seasoning (slightly less than 2 cups) instead of white rice. It was quite flavorful and made a very generous pan full.

This is an excellent recipe. However, there are two of us, I will make half a recipe next time. I topped each serving with the cheese. Next time I will top the melted cheese with sour cream and green onions. I will also include green olives in the recipe. Yum!

This was a big hit with my hubby. I would definitely make it again! I didn't need to make any changes. I just added a few more spices (paprika, oregano).

This is a hearty meal, and also good with kielbasa. This doubles REALLY well.

If this recipe is not spicy enough for your taste, use a jalapeno andouille sausage to give it extra kick. We made this for a party last night and our guests were licking the pan. Great one pan recipe!

This was very good and my kids loved it. It was easy to prepare and quick from prep to table. I always try to follow recipes to the letter the first time - but I didn't have loose sausage so I used cased sausage and cut into bite sized pieces and still it was good. This will go into the rotation. Thanks!!!
