Tangerine Toss Salad

Ingredients

  • 1/2 c sliced almonds
  • 3 T sugar, divided
  • 2 tangerines
  • 6 c chopped lettuce
  • 3 green onions, chopped
  • 2 T cider vinegar
  • 2 T olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Preparation

Step 1

In a skillett, stir the almonds and 2 tablespoons sugar; cook over low heat for 25 to 30 minutes or until sugar is melted and almonds are toasted. Remove from heat. Peel and section tangerines, reserving 1 tablespoon of juice. In long bowl, combine lettuce, onions, tangerines and almonds. In small bowl, whisk oil, vinegar, slat and pepper and rest of sugar. Drizzle mixture over the salad and toss to coat. Serves 6.
