Summer Rice Salad

Ingredients

  • Rice (see below), cooked in advance and cooled
  • 3/4 c. French dressing made with mustard & 1/4 c. mayo
  • 1/2 c. each thin sliced scallions & radishes
  • 1 green pepper, minted
  • 2 Tbsp. minced gherkins
  • 1 Tbsp. each minced parsley, snipped dill & chives
  • Salt & pepper to taste

Preparation

Step 1

Make 3 c. steamed rice and cool at room temp. Toss with 3/4 c. french dressing and 1/4 c. mayo. Add rest of ingredients and combine well. Chill.
