Soesjes

Ingredients

  • Filling:
  • 1/2 cup white flour
  • 3 large eggs
  • 1/4 cup butter
  • 1/2 cup water
  • pinch salt
  • 250 ml whipping cream or Cool Whip
  • Frosting:
  • 1 cup icing sugar
  • 1 tbsp. butter
  • 1 tbsp. cocoa
  • very small amount of milk

Preparation

Step 1

Preheat oven to 425F. Cook on centre rack. Bring water, salt and butter to a boil. Add the flour and stir rapidly with a wooden spoon until the dough forms a ball or two. Remove the pan from the heat and add one egg. Stir with wooden spoon until dough changes consistency from runny to creamy. Add the last egg and stir until creamy. Grease and flour 2 cookie sheets. Spoon dough onto the sheet. Place in oven. Bake 9 minutes then lower temp to 350F and bake 7 mins. more. You can tell when they are ready because they will puff up, brown lightly and slide off the sheet easily. Once timer goes off, turn off oven and leave in oven to cool. For filling, while whipping the cream, add 4 small tsp. of sugar to it. Remove the dough that is in the middle so that it is hollow. Fill with whipping cream. For frosting, in a bowl mix icing sugar, cocoa and butter with about 1 tbsp. milk. Stir. Add more milk if needed so that the frosting is creamy. If you add too much, add more icing sugar. Put a small amount of frosting on every soesje.
