Potato Salad

Ingredients

  • 6-8 Medium Red Potatoes, Washed, Peeled & Cut Bite Size
  • 3 Hard Boiled Eggs Diced
  • 1/2 C Celery Chop
  • 1/2 C Yellow Onion Chop
  • 1/2 C Sweet Relish
  • 4 oz Jar Pimentoes Diced & Drained
  • 1 T Rice Vinegar
  • 2 T Grey Poupon
  • 1/2 C Mayonnaise

Preparation

Step 1

Large Pot Boil Potatoes, About 15 Minutes Until Cooked, But Firm - Drain.

Add to Warm Potatoes Eggs, Celery, Onion, Relish & Pimento - Toss to Mix.

Small Bowl Whisk Vinegar, Poupon & Mayonnaise - Add to Potato Mix.

Salt & Pepper to Taste.

Optional: Sprinkle with Paprika.

Refrigerate Before Serving
