Blueberry Muffins

Inspired by the muffins sold at Boston's Jordan Marsh. These freeze beautifully.

Ingredients
- 1 cup sugar
- 2 eggs
- 2 cups of all-purpose flour
- 2 tsp double acting baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1 tsp vanilla
- 2 1/2 blueberries
- sugar for sprinkling tops of muffins.
Preparation
Step 1
Grease 12 muffin pan. Pre-heat oven to 375 degrees. In large bowl, with mixer at medium speed, cream butter or margarine and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Combine flour, baking powder and salt. Add alternately to creamed mixture with milk and vanilla.
Crush 1/4 cup berries and add to batter. Fold remaining remaining berries into batter and spoon into muffin pan. Sprinkle with sugar. Bake for 30 minutes or until toothpick inserted in center comes out clean. Cool in pan for 5 minutes and turn into wire rack. Makes 12 muffins.
