Ingredients

  • 3 ea EGGS
  • 1 cup Vegetable oil
  • 1 cup Sugar
  • 1 cup Brown sugar
  • 2 cups Zucchini grated (remove rind)
  • 2 tablespoon Vanilla
  • 3 cups Flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 2 teaspoon Cinnamon
  • 1/4 teaspoon Baking Powder
  • 1/2 cup Nuts chopped

Preparation

Step 1

1. Mix flour, baking soda, salt, cinnamon and baking powder together.

2. Beat eggs with mixer until lght and foamy, add oil, sugar, vanilla and zucchini.

3. Add to flourmixture and then add nuts. Mix well (with beather on high.)

3. Bake in greased loaf pan at 350? for 1 hour. Take out of pan and cool on rack. Slice, serve warm or cool.
