Ingredients
- 1 box unsalted Matzoh
- 6 eggs, beaten
- 1 1/2 c. sugar
- 1 - 8 oz. package cream cheese
- 1 pound cottage cheese
- 1/2 tsp. vanilla
- 1 c. yellow raisins
- 1/4 tsp. each nutmeg and cinnamon
- 2 grated apples or 1 can crushed pineapple
- 1/4 c. brandy or sherry
- 1/2 c. chopped almond or walnuts
- Butter
Preparation
Step 1
Break up matzoh into pieces and soak in warm water until soft (does not take very long). In sieve, squeeze out excess water.
Mix sugar, cream and cottage cheese and vanilla. Add remaining ingredients (except matzoh) and mix well. Add matzoh and mix lightly. Put in 9 x 13" glass baking dish, cover and refrigerate overnight.
Take off cover, dot with butter and sprinkle with a bit of cinnamon.
Bake, covered, 1 hour. Can be done ahead and put in fridge. Bring to room temp before proceeding. Bake uncovered 1/2 hour.
