Fish Stew

Ingredients

  • leeks
  • onion, chopped
  • carrots, chopped
  • celery
  • rind of lemon
  • garlic, 1 clove, minced
  • striped bass
  • olive oil
  • salt and pepper
  • 2 tbsp. butter

Preparation

Step 1

Saute leeks, onions, carrots, garlic for 2 minutes. Then add 1/2 cup water and let cook. Add the lemon rind.

Place fish in with the vegetables. Add salt and pepper. Sprinkle about 1 tbsp. olive oil over the fish.

Towards the end, add 2 tbsp. of butter to the fish.
