Souvlaki

Ingredients

  • Onion salad:
  • 4 lb pork, chicken, lamb or beef roast
  • 1 pkg bamboo skewers (soak in water for 1 hr before using)
  • 1/2 cup olive oil
  • Juice of half a Lemon
  • 1 tsp oregano
  • 1 medium red onion
  • 1 bunch fresh parsley
  • 2 medium tomatoes
  • 1 pkg reg sized pita bread
  • Olive oil
  • Salt and pepper

Preparation

Step 1

Trim fat & cut meat into 1 inch cubes. Put on skewers (5-6 per skewer rightly positioned). Grill on med-high for approx 20-25 min until meat is thoroughly cooked, brushing with oil mixture and turning frequently.

Quarter red onion and slice thinly. Chop parsley greens. Mix together in bowl squeezing until mixed and onions are separated and soft.

Halve tomatoes and cut into quarter inch slices.

Lightly brush pita on both sides with EVOO and warm slightly on grill

Pick up warmed pita, put skewer in the middle and squeeze pita closed while pulling out the stick. Add onion mixture, a few slices of tomato, salt and pepper and tzatziki.
