Spicy Beef Salad
- 1/3 cup red wine vinegar
- 3 tbsp vegetable oil
- 1/2 tsp oregano
- 1/2 tsp chili powder
- 1/4 tsp cumin
- 1/8 tsp garlic powder
- 1/8 tsp red pepper flakes
- 4 cup salad greens- romaine, leaf, spinach
- 8 oz cooked lean beef-cut into strips
- 1 cup shredded low fat cheddar cheese
- 2 hard cooked eggs-diced
- 1 tomato cut into wedges
Mix all dressing ingredients together.
Place cooked beef into a bowl and cover with dressing, let stand for up to 1 hour.
Combine all other salad ingredients.
Drain and reserve dressing from beef strips.
Add beef to salad.
Just before serving pour reserved dressing over salad, mix and serve.
