Gazpacho

Ingredients

  • 1 clove garlic, peeled
  • 4 ripe tomato, cut in 1/8's
  • 1/2 green pepper, seeded & sliced
  • 1/2 small onion, peeled & sliced
  • 1 slim cucumber, peeled & roughly cut
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil
  • 3 tablespoons wine vinegar
  • 1/2 cup water

Preparation

Step 1

Put all of the ingredients in a blender or food processor for 5-10 seconds.

I serve with croutons
