- BATTER
- 1/2 cup butter or margarine
- 2 squares unsweetened chocolate -- (1 ounce each)
- 2 eggs -- well beaten
- 1/4 teaspoon peppermint extract
- 1 cup sugar
- 1/2 cup all-purpose flour -- sifted
- 1/8 teaspoon salt
- FROSTING
- 2 tablespoons butter
- 1 cup confectioner's sugar
- 1 tablespoon half and half
- 1/2 teaspoon peppermint extract
- green food coloring
- TOPPING
- 1 square unsweetened chocolate or semi sweet choc.
- 1 tablespoon butter

Step 1
For batter melt butter and chocolate in top of double boiler; cool. Add eggs, extract and sugar; beat thoroly. Add flour and salt; beat until blended. Spread evenly in a buttered 9 x 9 pan. Bake 350 oven for 20 minutes. Cool. For frosting, cream butter with confectioners sugar, half and half and extract until smooth and fluffy. Add about 1 drop of green food coloring (only enough to tint a delicate green). Spread frosting on cookie base. Place in refrigerator until firm. For topping melt chocolate with butter; drizzle over green layer. Spread gently with spatula covering entire surface.
