Layered Salad

Ingredients

  • Dressing:
  • Bag of Lettuce
  • 1 cup chopped celery
  • 1 can water chestnuts, chopped (optional)
  • 1 9 oz. bag frozen peas unthawed (or corn)
  • 3 large tomatoes, chopped into bite-size chunks( or red pepper)
  • 2 cups mayonnaise (lowfat or regular)
  • 2 TBSP sugar (optional if using sour cream)
  • 1/2 sour cream (optional)
  • Topping:
  • 3-4 sliced hard boiled eggs (if desired)
  • 2 cups shredded cheddar cheese
  • 3-5 slices crumbled cooked bacon

Preparation

Step 1

 Boil eggs until hard boiled, peel, cool and slice – set aside
 Cook bacon until crip, cool and crumble – set aside
 Mix mayo and sugar together in small bowl – set aside
Layer the salad ingredients in a large serving bowl or glass trifle dish in the following order:
 Lettuce
 Chopped celery
 Chopped water chestnuts
 Frozen peas
 Chopped tomatoes
 Mayo/sugar mixture
 Sliced eggs
 Shredded cheese
 Crumbled bacon
Finely chopped onion (optional)

Cover and chill for at least 2 hours before serving.
