Black Bean Mango & Jicama Salad


Black Bean Mango & Jicama Salad:

  • 1/4 cup of fresh lime juice
  • 1/4 cup of orange juice
  • 1 tsp. orange zest
  • 1 tsp. of lime zest
  • 1 tablespoon of finely chopped chipotle chili in adobo sauce
  • 1 table spoon garlic
  • 1 tablespoon kosher salt
  • 1 tablespoon pepper
  • 2 tablespoon sugar



Step 1


Gather orange and lime zest, 2 tablespoon of sugar, chipotle, garlic, salt, pepper; until sugar is dissolved, toss the dressing in the beans using rubber spatula. Let the beans sit a few minutes, toss the beans one more time, then fold in the mango, jicama, onion, basil, and olive oil.

To Assemble:

• 1 ripe mango, cut in ¼ inch cubes
• 1 cup of jicama
• 2 tablespoon of red onion
• ¼ cup of finely sliced fresh basil
• 3 tablespoons of olive oil
