Multigrain Fruit Bar Chews

Ingredients

  • 2 cups rolled oats
  • 1 1/2 cups Rice Krispies
  • 2 tbsp. sesame seeds
  • 8 oz. dried apricots
  • 1 cup raisins or dried cherries
  • 1/2 cup wheat germ
  • 1 cup light corn syrup
  • 1/2 cup sugar
  • 1 1/2 tsp. vanilla
  • 1/2 tsp. cinnamon

Preparation

Step 1

Heat oven to 350F. Spread oats, cereal and sesame seeds in a 10" X 15" non-stick jelly-roll pan. Bake, stirring occasionally, until oats are toasted, 15-20 mins. Chop apricots finely. Transfer to large bowl. Add raisins and wheat germ. Toss to combine. Stir in hot oat mixture. Lightly coat pan with cooking spray. In pan over medium-high heat, combine corn syrup and sugar. Bring to a boil. Reduce heat; stir in vanilla and cinnamon. Quickly pour over oatmeal and stir well. With wet hands, immediately spread mixture in pan. Chill until firm, at least 2 hours. Cut. Wrap individually in waxed paper or foil and store in airtight container. Refrigerate up to 1 month, freeze up to 3 months.
