CHOCOLATE UPSIDE-DOWN CAKE

This recipe came from Benefiber. You can add 1/4 cup of the Benefiber to the creamed butter mixture if you like for some added benefits.

Ingredients

  • 3/4 cup Sugar
  • 2 Tbsp Butter
  • 1 cup Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 1/2 Tbsp Coconut
  • 1/2 cup Milk
  • 1/2 cup Brown Sugar
  • 1/2 cup Sugar
  • 1/4 cup Unsweetened Cocoa Powder
  • 1 cup Boiling Water
  • Whipped Cream

Preparation

Step 1

Preheat oven to 350F. Grease and flour an 8-inch cake pan.

Cream together sugar and butter. Sift together flour, baking powder and salt. Stir in coconut. Add alternately to creamed mixture with milk.

Pour into prepared cake pan. Combine brown sugar, sugar and cocoa powder. Sprinkle over batter. Pour boiling water over all.

Bake 30 minutes. Turn upside down while hot. Serve cold with whipped cream.
