Orzo salad with feta, peppers and tomatoes

Ingredients
- 1/2 pound of orzo pasta
- 4 cups chicken stock (or water for vegetarians)
- 2 lemons
- 1/4 cup extra virgin olive oil
- Salt & Pepper to taste
- 1/2 cup red onion finely chopped
- 1/2 cup of chopped fresh parsley
- 1 tomato – seeded and chopped
- 1 bell pepper seeded and chopped
- 1 small cucumber seeded and chopped
- 3/4 cup feta cheese crumbled

Preparation
Step 1
1. Cook the orzo according to package directions- using chicken stock instead of water.
2. While the orzo cooks chop the onion, tomato, bell pepper and cucumber.
3. Wisk together the lemon juice, olive oil, salt and pepper. Set aside.
4. Combine cooked orzo with chopped veggies and parsley. Toss with the dressing. Mix in the feta before serving.
This dish tastes good if left to sit for a few hours before serving. It can also be served right away. It is best served at room temperature or cold.
