Chocolate Caramel Cookies aka Rolo Cookies
Delicious chocolate cookies with a gooey caramel center.
Ingredients
- 1 cup butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla
- 2 1/4 cups flour
- 3/4 cup cocoa
- 1 teaspoon baking soda
- 40-50 about 40-50 rolo candies
- 1/4 cup white sugar, for rolling
Preparation
Step 1
1. In bowl, beat butter, white sugar and brown sugar until light. Beat in eggs and vanilla until smooth.
2. In another bowl, combine flour, cocoa, and baking soda.
3. Stir into sugar-egg mixture to form soft dough.
4. Chill in fridge for a couple of hours. Place 1 tablespoon or so of dough in hands and flatten.
5. Put 1 rolo in center of dough. Bring up sides of dough to cover completely. Roll between palms to make a smooth ball.
6. Place 1/4 cup sugar on a plate and roll each ball in sugar..
7. Place on greased baking sheet (or silpat , parchment lined) and bake cookies at 350 for 8-10 minutes. Watch carefully, take out as soon as cracks begin to show. They should look like pillows, not flat!!
8. Cool on rack for about 10 minutes
Makes about 45 cookies.
