Make-Ahead Mashed Potatoes

Ingredients
- 3 lbs. potatoes (about 9 med), peeled & cubed
- 1 pgk. cream cheese, softened
- 1/2 c. sour cream
- 1/2 c. butter, cubed
- 1/4 c. milk
- 1 1/2 tsp. onion powder
- 1 tsp. salt
- 1 tsp. garlic powder
- 1/2 tsp. pepper
- 6 bacon strips, chopped
- 1 c. (4oz) shredded cheddar cheese
- 3 gr. onions, chopped

Step 1
Place potatoes in Dutch oven and cover w/ water. Bring to boil. Reduce heat, cover and cook 10-15 mins. or till tender. Drain; mash potatoes w/ cream cheese, sour cream, and butter. Stir in milk and seasonings.
In small skillet, cook bacon over med. heat till crisp. Remove back to paper towels w/ slotted spoon; drain.
Transfer pot. mix to a greased 13x9 dish; sprinkle w/ cheese, onion, and bacon. Cover and refrigerate till ready to use.
Remove from fridge 30 mins. before baking. Bake, uncovered, at 350 for 40-50 mins. or till heated through.
