Ingredients

  • 8 cups of watermelon -cubed
  • 8 cups of heirloom tomatoes – cubed
  • 4 cups of cucumber – cubed
  • 1 small bunch of parsley
  • 1 handful of cilantro leaves, shredded
  • small bunch of mint leaves
  • 2-3 scallions minced
  • 1 jalapeno, minced
  • fresh squeezed juice of 2 limes
  • sea salt to taste
  • freshly ground pepper
  • 1 c. pine nut cheese**
  • For the pine nut cheese, chop pine nuts in a food processor and combine with 2 teaspoons nutritional yeast, 1 tsp. sesame oil, and a generous pinch of sea salt
