Ingredients
- 8 cups of watermelon -cubed
- 8 cups of heirloom tomatoes – cubed
- 4 cups of cucumber – cubed
- 1 small bunch of parsley
- 1 handful of cilantro leaves, shredded
- small bunch of mint leaves
- 2-3 scallions minced
- 1 jalapeno, minced
- fresh squeezed juice of 2 limes
- sea salt to taste
- freshly ground pepper
- 1 c. pine nut cheese**
- For the pine nut cheese, chop pine nuts in a food processor and combine with 2 teaspoons nutritional yeast, 1 tsp. sesame oil, and a generous pinch of sea salt
