Ingredients
- 1 1/4 lb skirt steak
- salt and pepper
- 1 t vegetable oil
- 3/4 c dry red wine
- 4 thyme sprigs
- 1 bay leaf
- 1 tsp sugar
- 1/2 tsp worcestshire
- 2 t cold, unsalted butter cut into pieces
Preparation
Step 1
1) pat steak dry and sprinkle with salt and pepper. heat oil in skillet til hot. add steak, turning once, transfer to platter
2) pour off fat from skillet. add wine, thyme, bay leaf, sugar, worcestshire and deglaze for 1 minute., then boil sauce til reduced by half, about 2-3 minutes.
3) add any meat juices on the platter, remove skillet from heat, discard thyme and bay leaf. stir in butter. salt and pepper to taste
