ANYTIME MUFFINS

Ingredients

  • 2 cups rolled oats
  • 2 cups boiling water
  • 4 eggs, beaten
  • 2 cups sugar
  • 1 cup oil
  • 1 quart buttermilk
  • 3 cups whole wheat flour
  • 2 cups white flour
  • 5 tsps baking soda
  • 1 tsp salt
  • 4 cups all-bran cereal

Preparation

Step 1

Combine oats and boiling water; let cool. Mix together eggs, sugar, oil and buttermilk. Stir in sifted dry ingredients with All Bran just until moistened,

Store in covered container in refrigerator up to 6 weeks.

Bake in well greased muffin tins. Raisins or nuts may be added to batter before baking. Bake at 375 for 15 to 20 minutes. 5-6 dozen muffins
