Whole Wheat Apple Cinnamon Muffins

Ingredients
- 1 large apple, peeled, cored, and diced
- 1 tsp lemon juice
- 1 1.2 tsp cinnamon
- pinch nutmeg
- 2 1/2 c. white whole wheat flour
- 4 tsp baking powder
- 1/4 tsp. salt
- 1/4 c. honey
- 1/4 c. molasses
- 2 eggs
- 1 c. whole milk
- 1/2 c. butter, melted

Step 1
1. Put the diced apples in a small bowl and toss them with lemon juice. Sprinkle in the cinnamon and nutmeg and toss to coat apples evenly with spices. Set aside.
2. Whisk together honey, molasses, milk, eggs, and butter.
3. Combine the flour, salt, and baking powder in a 4c. measuring cup. Sprinkle over the wet ingredients and stir together until just combined.
4. Fold the apple mixture into the batter.
5. Using a 1/4 c. measuring cup, spoon batter into buttered muffin tins.
6. Bake muffins in a preheated 400 degree oven for 20-25 minutes or until done.
7. Let cool in the muffin pan for 5 minutes and then transfer to racks to cool. Store remaining muffins in an airtight container.
