Ingredients
- 1 c. finely chopped sweet onion
- 2 T. butter
- 30 oz pkg frozen shredded hash brown potatoes, thawed
- 2 c. shredded Swiss cheese
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 eggs
- 1 c. milk
Preparation
Step 1
In a small skillet, saute onion in butter until tender. In a large bowl, combine the hash browns, cheese, salt, pepper and onion mixture. Transfer to a greased 9x13" baking dish. In a small, whisk eggs and milk; pour over potato mixture. Bake, uncovered, at 350 degrees for 35 to 40 minutes or until edges begin to brown. Let stand for 5 minutes before cutting.
