Extract - Vanilla homemade

I like to make my own homemade vanilla extract. This recipe takes 6 - 8 weeks, but I like leaving it longer (12 weeks+). The longer, the better.
Make sure your jars are sterilized, dishwashers are good to use for this.
After the time, you can transfer the extract to small gift size bottles. I use 4 ounce bottles. Be sure to get the amber colored bottles for this.

Ingredients

  • This recipe/amount is for 1 cup. I always make a lot more, but make it in 1 cup sizes.
  • 5 Madagascar Vanilla beans
  • 1 cup vodka
  • 1 pint glass jar

Step 1

Take the vanilla beans and cut them in half (cross ways), then split down the middle leaving about 1/4 of the bean so it stays together. You now have 10 halves. Place these in the glass jar.
Add 1 cup of vodka. Make sure the beans are all covered by the vodka. Next, put the lid on the jar and tighten. Swirl the jar so that the beans and vodka mix good. (Be sure the jar is tightly sealed)
Place jar in a cool dark cabinet/storage area.
Shake / swirl the jar daily.
Extract will be ready in 6 - 8 weeks. The longer you leave it, the better it gets. I usually leave mine at least 12 weeks or longer.
