Ingredients
- Dressing:
- 8 oz. vermicelli
- 4 oz. snow peas
- 4 oz. smoked ham, cut into thin strips
- 1 bunch green onions, chopped
- 1/2 cup chopped peanuts
- 2 Tbsp. sesame seeds
- cilantro leaves for garnish
- 2 Tbsp. rice wine vinegar
- 2 Tbsp. soy sauce
- 2 Tbsp. smooth peanut butter
- 1 tea. ground ginger or 1 Tbsp. minced fresh
- 2 cloves garlic, minced
- 2 tea. sugar
- 1 tea. red pepper flakes
- 4 Tbsp. vegetable oil
- 2 te. sesame oil

Prepare dressing: whisk together vinegar, soy sauce, peanut butter, ginger, garlic, sugar and red pepper flakes. Whisk in both oils until well blended. (Can be prepared several hours in advance)
Bring saucepan of salted water to boil. break pasta into 4" lengths. Cook vermicelli in boiling water until al dente. Add snow peas to pan for the last 30 seconds. Drain pasta and peas in colander, then run under cold water to stop cooking.
In a mixing bowl, combine pasta, snow peas, ham and green onions. Add dressing and toss until coated. Cover and chill at least one hour or up to 8 hours.
When ready to serve, add peanuts and toss. Place on large platter and sprinkle with sesame seed, cilantro leaves and more red pepper flakes, if desired.
