Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups whole-wheat pastry flour
  • 1/4 teaspoon sea salt
  • 3/4 teaspoon baking soda
  • 1 tablespoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 8 tablespoons unsalted butter, room temp
  • 1/2 cup sugar
  • 1 large egg
  • 2/3 cup molasses

Preparation

Step 1

In large bowl, sift together first 8 ingredients. In a separate bowl, cream butter and sugar. Add egg and molasses; beat until combined. Gradually add flour mixture and beat until incorporated. Divide dough in half, wrap, & refrigerate at least 2 hours (or overnight).

Preheat oven to 350 degrees. On a lightly floured surface, roll out dough 1/8 inch thick. Cut out shapes with a cookie cutter. Place 1 inch on a parchment-lined baking sheet. Bake 8-12 minutes or until firm and edges just begin to brown. Remove from oven and let cool.
