Rainbow Squares

Ingredients

  • 2 cups flour
  • 2 tsp sugar
  • 1 cup margarine
  • 1 - 19 oz can crushed pineapple
  • 1/2 cup sugar
  • 3 Tbsp cornstarch
  • 1 small bottle cherries, drained and cut in quarters
  • 1 1/4 tsp almond flavouring
  • 2 egg whites
  • 4 Tbsp sugar
  • coconut

Preparation

Step 1

Mix flour, sugar and margarine. Press in 9" square pan. Cook at 350°F for 15 min. Cool. Cook pineapple, sugar and cornstarch until thick. Remove from stove. Add cherries and flavouring. Spread on base. Beat egg whites until stiff. Add sugar. Spread over filling. Sprinkle with coconut. Brown in oven, watching closely.
