Ingredients

  • Cookie:

  • 1 1/4

    c. butter (softened)

  • 1

    egg

  • 1

    c. brown sugar (packed)

  • 2

    tsp. vanilla

  • 1/2

    c. sugar

  • 1

    tsp. baking soda

  • 1 1/2

    c. flour

  • 1

    tsp. salt

  • 3

    c. oats

  • 1/4

    tsp. cinnamon

  • Cream filling:

  • 1/2

    c. butter (softened)

  • 1

    7-ounce container Marshmellow Fluff

  • 3

    c. powdered sugar

  • 1

    tsp. vanilla

Directions

In a mixer, cream the butter. Add sugars and continue mixing until the mixture is creamy. Add egg and vanilla, mix well. In a separate bowl, mix the dry ingredients together (oats, flour, baking soda, salt, cinnamon). Add dry ingredients to wet ingredients and blend. Drop rounded balls onto a baking sheet and bake at 375 degrees for 11 minutes. Once cooked, place on a wire rack to cool completely. Cream together butter and marshmellow. Slowly add the powdered sugar and vanilla and beat until smooth and fluffy. Add 1 T. scoop of cream filling to the bottom of 1 cookie and add another cookie to the top to make your Oatmeal Cream Pie!
