Rotisserie - Rosemary-Garlic Grilled Chicken

Ingredients

  • 1 orange, halved
  • 1 lemon, halved
  • 1/2 cup packed brown sugar
  • 1/2 cup salt
  • 6 cloves garlic, peeled
  • 1 bay leaf
  • 1 roaster chicken (about 7 lb)
  • 2 Tbsp. garlic-flavored olive oil
  • 1 Tbsp. chopped fresh oregano
  • 1 Tbsp. chopped fresh rosemary

Preparation

Step 1

Juice orange and lemon; reserve all juice and citrus rinds. In pot over high heat, bring 2 cups water, brown sugar and salt to a boil. cook 1 minute or until sugar is completely dissolved. remove from heat. Add 1 1/2 qts. cold water, garlic cloves, bay leaf nd reserved orange juice, lemon juice and citrus rinds.

Place chicken in citrus brine. In refrigerator, let chicken sit in citrus brine at least 2 hours. drain chicken and plat dry; discard brine.

Heat grill. brush oil evenly over chicken. Sprinkle with chopped oregano and rosemary. Place chicken in grill-safe or aluminum-foil roasting pan.

Place pan on grill over indirect heat; cover grill. Cook chicken 1 1/2 hours or until 175 degrees. Let sit 20 minutes before slicing.
