Green Salad with Fennel & Peas

Ingredients
- 1/2 haed of Boston lettuce
- 1/2 head of green leaf lettuce
- 1 head of Frisee
- 1 small bulb onion julienne
- 1/2 bulb of Fennel julienne
- 1 cup green peas blanched
- For the vinaigrette
- 1 tbsp red wine vinegar
- 1 tbsp lemon juice
- 2 tbsp roasted white oions
- 2 tbsp green peas blanched
- 1 tsp honey
- 5 tbsp extrs virgin Olive oil
- 5 salt and pepper to taste

Preparation
Step 1
Place all the washed lettuce in a bowl and add the peas, fennel and onions, dress with the vinaigrette and serve immediately.
For the vinaigrette:
Place all the ingredients except for the oil in a blender and pulse until liquified, remove and taste for correct seasoning. Strain through a fine mesh strainer and whisk the oil into it. Set aside until needed.
