Green Salad with Fennel & Peas

Ingredients

  • 1/2 haed of Boston lettuce
  • 1/2 head of green leaf lettuce
  • 1 head of Frisee
  • 1 small bulb onion julienne
  • 1/2 bulb of Fennel julienne
  • 1 cup green peas blanched
  • For the vinaigrette
  • 1 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 2 tbsp roasted white oions
  • 2 tbsp green peas blanched
  • 1 tsp honey
  • 5 tbsp extrs virgin Olive oil
  • 5 salt and pepper to taste

Preparation

Step 1

Place all the washed lettuce in a bowl and add the peas, fennel and onions, dress with the vinaigrette and serve immediately.

For the vinaigrette:
Place all the ingredients except for the oil in a blender and pulse until liquified, remove and taste for correct seasoning. Strain through a fine mesh strainer and whisk the oil into it. Set aside until needed.
