Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 1 16-oz can tomatoes
- 1 cup uncooked rice
- 1 envelope taco seasoning
- 1 cup shredded cheddar cheese
- 2 cups shredded lettuce
- corn chips or tortillas
- salsa
- sour cream
Preparation
Step 1
Brown ground beef and chopped onion in skillet. Drain.
Drain liquid from tomatoes into measuring cup. Add enough water to make 2 1/2 cups. Add liquid, rice, and taco seasoning mix to beef in skillet. Stir and bring to a boil. Reduce heat and cover, simmering for 25 minutes, or until liquid is absorbed.
Serve with cheese, lettuce, salsa, sour cream and chips.
