Ingredients
- 1 Tbsp. chopped fresh thyme
- 1 Tbsp. Dijon mustard
- 1 Tbsp. butter, melted
- 1 Tbsp. olive oil
- 2 lbs. baby red and/or white potatoes, quartered
- 2 bell peppers, sliced
- 6 cloves garlic, peeled
Preparation
Step 1
Heat grill. In a bowl, combine first 4 ingredients. Add potatoes, bell peppers, and garlic; toss gently to coat.
Spoon potato mixture onto center of 14" square of heavy-duty foil. Season with salt and pepper. fold foil over potatoes; press to seal tightly.
Grill packet 30minutes or until potatoes are tender, shaking occasionally.
