For sauce...Saute olive oil, fresh garlic , green peppers, and sweet onions. Add crushed tomatoes, red pepper flakes, tomato sauce, fresh parsley, fresh basil, carrots, bay leaf, salt pepper, 1-2 tsp. oregano. Rinse chicken, dip in eggs and then Italian bread crumbs. Put olive oil in dish and put in 350 oven for 5 minutes. Add chicken and cook uncovered for 1/2 hour. (Turn 1/2 way). Take out of oven and place sauted canadian bacon, grated asiago cheese on top,...and bake for a few more minutes until warm. (Could use ham, could serve with pesto.) Box or two of thin spaghetti. Saute shrimp in olive oil. For tomatoes... Slice tomatoes and place on leaf lettuce. Spread fresh mozzarello cheese, chopped red onion, fresh basil, and balsamic vinagrette on top.
