Cheesy Mexican Chicken

Ingredients

  • 6 small boneless skinless chicken breast halves, pounded to 1/4-inch-thickness
  • 1 can (10-3/4 oz.) condensed cream of chicken soup
  • 1 1/2 cups Shredded Mild Cheddar Cheese, divided
  • 1/2 cup milk
  • 1 package Taco Seasoning Mix
  • 2 cups corn chips
  • Hot cooked rice

Preparation

Step 1

Preheat oven to 375°F. Place chicken in 13x9-inch baking dish.

Mix soup, 1 cup of the cheese, milk and seasoning mix until well blended; spoon over chicken. Top with corn chips; cover.

Bake 30 minutes. Sprinkle with remaining 1/2 cup cheese. Bake, uncovered, an additional 10 minutes or until cheese is melted. Serve with rice.

I didn't want to pound the chicken so i just bought a bag of frozen chicken breast halfed filets and the dish turned out good. The Fritos make the whole dish I recommend using A LOT!!

The man in my life is extremely picky and he devoured this cheesy chicken meal!! It tasted the best when I substituted the original taco mix with a cheesy taco mix.

This was an easy to make meal, very tasty and full of flavor. I did add a dash of chili powder and cilantro to the sauce. Will make again.

THE BEST, tried and true for over 15 years now! We make with hot & spicy taco seasoning, and add the Fritos when we're ready to eat to make sure they're crunchy.... good with sour cream on top!

Perfect for our family! I added a half cup of salsa in with the mixture! Wonderful!

This was too salty and spicy for my taste. However, I will try again with half the seasoning, fresh tomatoes, lettuce, and some sour cream. I think this can be tailored to be a super yummy dish.
