Breakfast for Dinner Casserole

Ingredients

  • 1 tbsp butter
  • 1 small onion, chopped
  • 1/2 green pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 lb. bulk turkey or pork breakfast sausage (casing removed)
  • 1 1/2 cups chopped, lightly packed fresh spinach
  • 8 large eggs
  • 1/2 cup milk

Preparation

Step 1

Preheat over to 325 degrees.

Mist a 9x13 pan with cooking spray.

Melt butter in a skillet over medium heat. Saute onion and peppers until almost tender (about 8 minutes). Add sausage and break up meat. Saute until brown, about 4 minutes. Sprinkle in spinach and cook until wilted, about 1 minute.

In a bowl, whisk eggs, milk, salt and pepper. Take sausage mixture and spread in 13x9 pan. Pour egg mixture over sausage. Sprinkle cheddar on top.

Bake until eggs are no longer runny and cheese is melted. 20-25 minutes.
