- 2 pounds bass fillets cut serving size
- 1 cup all-purpose flour
- 1 cup cornstarch
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/8 teaspoon freshly-ground black pepper
- 1 egg well beaten
- 1 1/2 cups water
- Peanut oil for frying
Combine flour, cornstarch, baking soda, salt and pepper. Beat egg and water together, add to the dry mix and stir until smooth.
Dip fish fillets in batter, and fry until golden-brown in peanut oil heated to 375 degrees.
