Coca-Cola Cake

Our Coca-Cola Cake is simply one of the best sheet cake recipes on earth. The magical brew of carbonated cola is the secret to the tender texture.

Ingredients

  • 1 cup Coca-Cola
  • 1/2 cup buttermilk
  • 1 cup butter or margarine, softened
  • 1 3/4 cups sugar
  • 2 large eggs, lightly beaten
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup cocoa
  • 1 teaspoon baking soda
  • 1 1/2 cups miniature marshmallows
  • Coca-Cola Frosting
  • Garnish: 3/4 cup chopped pecans, toasted

Preparation

Step 1

Combine Coca-Cola and buttermilk; set aside.

Beat butter at low speed with an electric mixer until creamy. Gradually add sugar; beat until blended. Add egg and vanilla; beat at low speed until blended.

Combine flour, cocoa, and soda. Add to butter mixture alternately with cola mixture; begin and end with flour mixture. Beat at low speed just until blended.

Stir in marshmallows. Pour batter into a greased and floured 13- x 9-inch pan. Bake at 350° for 30 to 35 minutes. Remove from oven; cool 10 minutes. Pour Coca-Cola Frosting over warm cake; garnish, if desired.

Note: Don't make the frosting ahead--you need to pour it over the cake shortly after baking.

Coca-Cola Frosting:

1/2 cup butter or margarine $
1/3 cup Coca-Cola $
3 tablespoons cocoa
1 (16-ounce) package powdered sugar
1 tablespoon vanilla extract


Bring first 3 ingredients to a boil in a large saucepan over medium heat, stirring until butter melts. Remove from heat; whisk in sugar and vanilla.

This cake was easy to prepare and was very moist, I should have been much more observant to read to not make the frosting ahead of time because it was not pourable and was much more like a spreadable frosting, nonetheless, the cake turn out well and I would definitely make it again.

This is the most fun cake to make. I love how light and fluffy, yet moist and rich it turns out! I made this for a dear friend's birthday. I can't wait to see what she thinks of it!

Very easy. Tender..Frosting excellent. I made frosting when cake was done cooking and poured it over cake when cake was cooled 10 min as instructed(VERY IMPORTANT) and it came out perfect!! Love that no need to remove cake from pan or frost it. A KEEPER!!

Delicious; I did reduce the sugar in the cake to 1 1/2 cups, because of the addition of the marshmellows and I think the next time that I make it, I will only add 1 cup of the marshmallows because the frosting is very sweet.

I made this cake over the weekend and it was fantastic. Very simple to make and probably THE most moist cake I have ever had. This is a keeper.
