Ingredients

  • 1 18.5 oz box vanilla cake mix
  • 3 eggs
  • 1/3 cup vegetable oil
  • 3/4 cup finely chopped pecans
  • 20 soft caramels
  • 1/2 cup heavy cream
  • frosting: 1-8oz. cr. cheese soft
  • 1/2 cup unsalted butter, soft
  • 1 box powdered sugar
  • 1 tsp. vanilla
  • 1 cup coarsely chopped pecans

Preparation

Step 1

350-coat two 9 inch pans with pam and line with waxed paper and spray again-prepare cake following pkg directions, using the eggs 1 1/4 cups water and oil. stir in finely chopped pecans-bake 24 min. cool 10 min before inverting and cool completely. Melt caramels and cream in small pan over medium about 5 min stiring constantly till smooth-let cool slightly-use end of wooden spoon to poke random holes in each layer of cake-pour sauce evenly over cakes and let stand 1 hour

frosting-beat cheese, butter, sugar, and vanilla till smooth

frost first layer and then next layer and frost whole cake and press pecans only on sides fridge 1 hour before serving
