Mixed grilled veggies in home made tomatoe sauce

Best if veggies are grilled on BBQ first then chopped

Ingredients

  • Roasted Vegetables
  • 2 large sweet onions
  • 2 large bell (yellow, red or orange) peppers
  • 2 large zucchini or yellow squash
  • 1 large egg plant
  • 1/2 cup olive oil (put on before grilling)
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • Sauce
  • 3 large tomatoes peeled and cubed
  • 2 garlic cloves crushed (or 1 teaspoons minced garlic
  • 1 28 oz. crushed tomatoes
  • 1/2 teaspoon sea salt
  • 1 Tablespoon fresh oregano or 1 teaspoon dried
  • 1 Tablespoon fresh basil or 1 teaspoon dried
  • 20 basil leaves
  • 1/2 cup chopped fresh parsley or 1/4 cu dried
  • 1 1/2 teaspoon dried red pepper flakes
  • 1 cup chopped kalamata olives
  • 1/2 cup goat cheese crumbled

Preparation

Step 1

Cut up grilled veggies. In large pan combine sauce (minus olive oil). Add veggies to the sauce. Simmer 20 minutes. Serve with sprinked goat chees.


Note for single dish, we grilled portablello mushrooms and added some brown rice to make it the meal vs. a side dish.
