Ingredients
- 4 chicken breasts halves, skinned and boned
- 1/3 cup creamy peanut butter
- 1 Tbsp. honey
- 3 Tbsp. lime juice
- 2 Tbsp. soy sauce
- 1/2 tea. ground cumin
- 1/2 tea. ground coriander
- 1/4 tea. hot pepper sauce
- 3 cups rice, cooked
- 2 Tbsp. sliced green onions, tops only
Preparation
Step 1
Place chicken in a 9x13 dish. Mix peanut butter and honey in a small bowl. Gradually stir in lime juice and soy sauce. stir in cumin, coriander and pepper sauce. Brush chicken with about half of the peanut butter mixture. turn chicken, brush with remaining mixture. (Put in a ziplock?) Cover and refrigerate for at least 2 hours. remove chicken from refrigerator 1/2 hour before cooking.
Preheat oven to 375 degrees.
Cover with foil and bake chicken for 30 minutes. remove from oven and spoon sauce over chicken. Cover and return to oven and bake about 20 minutes longer.
Skim fat from drippings and discard. Spoon remaining drippings over chicken and serve over rice. Sprinkle with green onion slices.
