Ingredients
- 1 chicken, 3 lbs., cut into pieces
- 2 Tbsps oil
- 2 tsp minced garlic
- 3 tsp grated lemon rind
- 4 Tbsps lemon juice
- 1 Tbsp honey
- 1/4 tsp each salt and pepper
- 1 tsp dried oregano leaves
- 1/2 tsp dried thyme leaves
- Pinch of red pepper or crushed red pepper
Preparation
Step 1
Cut off all excess fat from chicken.
Rub a baking dish, large enough to hold chicken in one layer with 1 tablespoon of oil.
Rub chicken with garlic. Place skin side down in dish. Sprinkle with lemon rind.
Combine remaining oil, lemon juice and honey. Pour over chicken. Sprinkle with salt, pepper, oregano, thyme and red pepper.
Bake at 400 degrees for 30 minutes.
Turn pieces. Bake for another 20 minutes. Baste the chicken during the last 20 minutes.
Remove to serving dish. Spoon with pan drippings.
Serve chicken with rice or noodles or steamed broccoli.
If you prefer, use only chicken breasts and shorten cooking time by 10 minutes.
