Potato Bread

  • 1 c. milk
  • 3 Tb. sugar
  • 2 tsp. salt
  • 3 Tb. butter
  • 3/4 c. instant mashed potato flakes
  • 2 envelopes active dry yeast
  • 1 c. warm water
  • 5 1/2 c. all-purpose flour, divided

Preparation

Step 1

Scald milk by adding it to a saucepan over medium heat. Bring milk just to boiling; add sugar, salt5, butter, and potato flakes. Let cool to lukewarm. In a large bowl, dissolve yeast in warm water between 110-115 degrees. Stir in milk mixture. Add 3 c. flour; beat until smooth. Add enough of remaining flour to form a soft dough. Turn dough out onto a lightly floured surface and knead until smooth, about 8-10 minutes. Place in a greased bowl; cover and let rise until double in bulk, about one hour. Punch down and shape into 2 loaves. Place in 2 greased 9x5" loaf pans; cover and let rise again until double. Bake at 400 degrees for 10 minutes, then reduce temperature to 375 degrees. Continue baking for 30 minutes. Turn bread out onto a wire rack to cool. Makes 2 loaves.
