Lemon Cheesecake Bars

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1 cup flour
  • 1 cup rolled oats
  • 1 8oz pkg cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 2 Tbsp milk
  • 1/4 cup lemon juice
  • 1 Tbsp lemon rind

Preparation

Step 1

Cream butter and sugar until smooth. Stir in flour and oats, mixing until crumbly. Reserve 1 cup. Press remaining mixture into 8" square baking dish. Place dish on rack or inverted saucer. Microwave at medium power for 3 minutes, rotating 1/4 turn halfway through. Beat cream cheese and sugar together thoroughly with electric mixer. Add remaining ingredients, beating until smooth and light. Spread over base. Sprinkle with reserved crumbs. Microwave at high power for 6-10 min, or until set in centre, rotating 1/4 turn every 3 min. Cool directly on countertop.
