ROUGHRIDER CAKE

This is a pistachio dessert - everyone from Saskatchewan calls it Roughrider Cake - green and white - get it?

Ingredients

  • BOTTOM:
  • 1 cup flour
  • 2 tbsp icing sugar
  • 1/2 cup butter
  • 1/4 cups crushed almonds or pecans
  • SECOND LAYER:
  • 1 - 8 oz package of cream cheese
  • 2/3 cup icing sugar
  • 1 litre of cool whip (using 1/2 for this layer)
  • THIRD LAYER:
  • 2 pkgs of pistachio instant pudding mix
  • 2 1/2 cups milk
  • TOP LAYER:
  • Remainder of cool whip
  • Slivered almonds or flaked almonds

Preparation

Step 1

BOTTOM LAYER:

Mix all ingredients and spread into 9 x 13 pan. Bake at 300 degrees for 15 minutes

SECOND LAYER:

Beat cream cheese and icing sugar. Add 1/2 of cool whip. Spread on cooled bottom layer

THIRD LAYER:

Mix ingredients. Spread on second layer.

TOP LAYER

Spread on remainder of cool whip. Top with nuts.

Cool and cut into squares
